For generations, Norwegian brewers have been quietly passing down the yeast that ferment their unique, characterful farmhouse ales between family and friends. But now that a few yeast labs have begun collecting, propagating and selling the yeast, American brewers are catching on to what’s been known in Norway for centuries: This stuff can make some fantastic beer.
