What is a Phenolic Off Flavor?
What do POFs smell like in beer?
POF stands for phenolic off-flavor, the clove, pepper, and spice of 4-vinylguaiacol (4VG), the same compound that gives clove its bite. A strain that makes 4VG is POF positive; one that doesn't is POF negative. The clove character isn't a flaw in a traditional Hefeweizen, but in a strain you'd otherwise love for its esters, that phenolic layer masks the fruit aromas. POF− technology takes the mask off. What rushes in is ripe banana, strawberry, and stone fruit.

Bananza Ale (OYL-400) — Ripe banana, front and center. Built for stouts, IPAs, fruited sours, and other modern fruit-driven styles.

What to expect
