Yeast Thumb 67

The Lager I strain is thought to be from Budjovice in the Czech Republic, and the early inspiration for light American lager. This crisp, balanced strain is lightly malty and finishes with very slight fruit notes. It is the backbone of the classic Czech Pilsner profile, where the yeast character should neither dominate nor disappear among the beer’s subtle balance of malts and hops.
